The First Step in Building a Conservatory


Is there anything better than rhubarb pie? Rhubarb pie has to be the best spring dessert, hands down! When the rhubarb starts growing in the spring, I can’t wait to make that very first rhubarb pie. Rhubarb happens to be one of the first plants to start growing in early spring when it’s still pretty chilly outside! Today I made a rhubarb pie using those very first rhubarb stalks. Rhubarb pie has to be the best dessert of spring! Rhubarb pie has to be the best dessert of spring! I made a classic rhubarb pie, which is what I usually make because it’s so incredibly delicious. Plus, it’s both simple and super quick to make. Here’s how I make my rhubarb pie. Classic Rhubarb Pie with Crumb Topping 6 large stalks of rhubarb, about 1.5 kg 2.5–3 dl granulated sugar (rhubarb requires more sugar) 2 tbsp potato starch Crumb Topping 200 grams butter 4 dl all-purpose flour 6 tbsp granulated sugar Here’s how to make it Start by peeling off the thin skin on the rhubarb. Then cut it into thin slices, about 0.5 cm thick. Place all the rhubarb in a buttered ovenproof dish. Sprinkle the granulated sugar and potato starch evenly over the rhubarb. You can make the crumble topping either in a food processor or by hand. Add all the ingredients and work them together into a crumb topping. I usually cut the butter into cubes. Sprinkle the crumb topping over the rhubarb and bake in the center of the oven at 225 degrees for about 30–40 minutes. If the top of the pie starts to brown before it’s done, cover it with foil. Check with a fork to make sure the rhubarb is tender before removing it from the oven. I think Marsan sauce is the best. But of course, you can make your own vanilla sauce or buy a ready-made one to whip up. Yum!
